Step 1 Place a pail beneath the door spout and raise the draw arm. Pour two gallons (7.6 liters) of fresh mix into the hopper and allow it to flow down into the freezing cylinder. This will force out any remaining sanitizing solution. Figure 21 Step 2 When full strength mix is flowing from the door spout, lower the draw arm. Cleaning and sanitizing schedules are governed by federal, state, or local regulatory agencies, and must be followed accordingly. If the unit has a “Standby mode”, it must not be used in lieu of proper cleaning and sanitizing procedures and frequencies set forth by the ruling health authority. On the underside rear of the base pan, two 3/8” I.P.S. (for single head units) or two 1/2” I.P.S.
